how to make lentil soup





Easy, light and healthy soup.
warm dinner in a cold winter day.
A meal for babies .


Ingredients:
- 1 cup yellow lentils ( washed).
-1 medium onion.
- 1 medium potato.
- 1 medium carrot.
- 1 tomato.
- salt + 1 tsp cumin + 1 tbsp onion powder +1 tsp garlic powder.

* you can replace the garlic powder with one clove of garlic.







cooking:
 Cut all the ingredients in any shape and size .. and put it in a pot on the stove and add 1 liter of water and the salt.
Let it simmer  until tender then put in a blender to grind with the cumin, the onion and the garlic powder.

* Select the amount of water according to the required intensity of the soup .. Reduce the water if  thick .And increase the water if light.


serve it warm with bread

how to make Molokhia _ Mallow _ Corchorus





  One of the delicious  Egyptian dishes . You find it in all menus in the finest hotels in Egypt.

 Ingredients:

  -1/2 kilo fresh Molokhia .. or frozen.
  - 1/2 liter stock (meat or chicken).
  - 2 cloves of garlic + 1 tbsp ground     coriander seeds.
  - salt



 preparing


  wash the Molokhia very well.


  pick the leaves of the mallow.


  let them dry of excess water.
 


  start  chopping  the mallow leaves very fine, you can use a knife or food processor , but most Egyptians use (el- makrata) the semicircular knife, which is the easiest and fastest tool.

  

  this is a picture at the beginning of  chopping  the mallow.



continue chopping to be very fine like this. 



  add salt to the soup and boil it ... then add the mallow.
  

  let it boil for just one minute ( the more we boil Molokhia makes it separated from the soup and settle to the bottom).


  in another container (pan) mince the garlic with the coriander.



  then add 1tbsp ghee and saute it until golden ( don't burn the garlic) 



   Finally add it immediately to the mallow and stir.

  serve it with rice or bread and pickle eggplant .. some times we offer with tomato sauce.

how to make kusheri



A very tasty vegetarian recipe from Egypt.

ingredients:
serves 5
-2cups rice+ 1/2 cup noodles(shearia)
-1/2 pound pasta
-1 cup lentil (adas bjdh)
-2 medium onions +4tbsp flour+1tbsp starch (corn flower)
For the sauces
-4cups tomato sauce +1&1/2tbsp minced garlic+salt+2tsp cumin+2tsp coriander seeds powder +2tbsp vinegar.

Cooking:
Wash lentils well and add water (1/2 liter) then put it on high fire till boiling  then simmer on low heat until almost  all the water is absorbed and lentils are well cooked.
*some types of lentils need to be soaked before.


turn off the heat and add salt,1tsp cumin and 1tbsp oil.

to make the crunchy onion slices .... peel the onions and cut  it into thin slices..put on them equal mixture of flour and starch and mix  till you make sure that each slice has been covered with flour.




Fry onion, deep fried in any type of vegetable oil


 Cook pasta (Parboil it) i used two types Spaghetti and  small Rings



 Then cook a traditional rice with thin noodles.here is the recipe Egyptian rice with Shearia ( like this)



to make the Kosheri tomato sauce and garlic and vinegar sauce...mince the cloves of garlic with the salt, cumin and coriander.


take part of this mixture and saute it in one tbsp of oil until golden ,add the tomato and then let it simmer for 10 minutes  


the vinegar sauce... take the other part of the mixture and add to it a third of vinegar and two thirds water .


  in the serving plate put a layer of rice then pasta then the lentils  and the tomato sauce then finally the roasted  onions
